ps2 definetly, because of the point in time it was released + it happened to be the most popular one of that cycle. It was that sweet spot where 3d conventions and game design were more established, but still not "solved", AA games and new IPs were still regularly getting funded, and no one genre was king. It's probably the most varied and interesting console library ever. Also the ps2 bootup sound is fantastic.
No one asked, but that's also the reason the DS is the best handheld.
DS and 3DS are amazing handhelds, and are the best handhelds of all time (That's if we are counting the switch as basically a console, WHich I think it is)
