That could cover a lot of ground. You can see here for a list of links to data collections. China's statistics bureau will have a publications section with links to survey reports and research, a lot of which is published in English.
Outside of China, there are a couple of different international surveys, (the DHS being the main one, LSMS has an ag focus) which have extensive lists of publications associated with them. Are you interested in reports on the survey data or understanding how the surveys were conducted?
That's also pretty broad. If you're interested in how a particular survey was carried out, there's typically a survey report that's issued with the data that describes how the sampling frame was constructed, when field work took place, and any issues encountered with reaching a household. The questionnaire design tends to be a bit more of a black box and the short answer is typically "it was a adapted from a previous survey,," so you might not find much there.
