Start with Way of Kings imo. It is his magnum opus after all.

Otherwise Elantris is kinda cool but it's earlier work and maybe the most Mormon.

Warbreaker is funny as he takes a shot at writing semi-erotic stuff. Cool magic though.

The Mistborn stuff has cool magic too but for me the setting is strange and the politics lib as fuck and may make you angry.
