    Hold up, have you seriously never had refried beans? They're good on nachos and in burritos (even the canned ones), so they're usually served with some kind of cheese. I can't speak to how well that translates with the vegan stuff, but a dead simple bean burrito recipe would just be refried beans and maybe some rice (seasoned with cumin, chili powder, and a little bit of cilantro) wrapped in a tortilla. If you can find it, red chile sauce (note: this is different stuff from regular salsa or picante) is a nice addition along with the beans and rice.

    As for healthiest, that depends on what you're looking for. Possibly black beans for the higher fiber and thiamine content, while garbanzo beans are really high in manganese.

    They've all got different applications. I wouldn't make hummus out of black beans or Refried beans out of navy beans.

    black beans are my number one. I soak garlic in red wine vinegar and add it to the beans.

    Literally just Refried beans and rice. Black beans with red-wine-vinegar soaked garlic served with baked yams and kale. Curried lentils with mustard seed, Apricot and coconut. Edamame with salt. Hummus with Tahini mixed in. Succatash.

    They're all pretty healthy. I'd say Edamame and sprouted mung beans are both contenders.

    tbh most beans are very bland and similar, the taste will be coming from the spices and other ingredients used. Texture will vary great, not only among types of beans but also cooking methods. You can bake chickpeas to become crisp on the outside and soft in the middle like a roasted potato, or eat it soft in a salad, or blend it into hummus.

    What beans do I personally cook with most?

    Chickpeas and soybeans if that counts

    Refried beans are just stewed/blended beans usually with a bit of fat and spices. Most grocery stores have vegan refried beans in cans, which are ok in a pinch but could use some spice. They’re usually served as a side at Mexican restaurants with rice.

    Roasted chickpeas: take canned or cooked chickpeas, add some salt or tamari or miso, add some spices, lightly oil a baking sheet and cook at 425 for 40 minutes.

    Replace chickpeas with diced tofu, go up to 50 minutes as desired for simple roasted tofu.

    Any “rice and beans” type recipe, usually you want a grain, beans, garlic, onion, some tomato. Recently made a Black bean and quinoa salad like that and it slaps. Just look up recipes.

      All beans are healthy, can’t really go wrong there unless you’re eating pickling beans with a lot of sodium. I will say white rice is a common pairing with beans and not super healthy.

      on a more serious note, if you want my not particularly secret hummus recipe:

      1. buy some sesame seeds in your local grocery store bulk section. toast them in a frying pan and toss them in a food processor with half olive oil and half canola oil because you ran out of olive oil. Add oil until the blended result is sort of like peanut butter
      2. put that in the food processor with some lemon juice and blend that shit
      3. add your spices and seasonings. cumin, garlic, garlic salt, etc.
      4. add your boiled garbanzo beans you got from the same said bulk section
      5. blend that shit until it's nice and pasty
      6. put it in the fridge

      TO SERVE:

      1. scoop into bowl
      2. add some more water/olive oil because it looks pretty dry
      3. scoop in some sun dried tomatoes and roasted paprika and stir
      4. drizzle with some olive oil if you feel fancy
      5. serve with chips of choice

    You can start with just the curried chickpeas with spinach and serving it with rice and move up to adding the sides when you're ready. (I don't have a vegan naan recipe that I've liked though if anyone can hook me up)

      Another easy one you can pull out when you need to impress people are black bean sweet potato tacos. I don't usually use a recipe, but this one seems good enough:

      Replace the cayenne with taco seasoning or chili powder if you don't like spicy food

      You can do basically whatever you want for a dip or sauce. Avocado, guacamole, salsa, all good. Sometimes I'll make a lime crema to go with it

    1. I really like Kidney beans, Great Northern beans, and Black Eyed Peas

    2. I usually cook with Great Northern Beans or Dark Red Kidney beans

    3. Refried beans, or Refritos in Spanish are beans (usually Pinto or Black beans) cooked with some kind of oil (usually an animal fat such as lard, I personally use refined coconut oil) and spices.

    4. My favorite bean recipe is super easy, its a White Bean and Kale soup. I start with a basic mirepoix (carrot, onion, celery, garlic - sautee carrots and celery until fragrant, add onion and sautee until translucent, add garlic and sautee until fragrant, add salt and pepper), deglaze with white wine (flambe it if I'm feeling fancy, but its totally just for show), add Great Northern and Cannelloni beans, a big spoon full of white miso paste, and a gallon of your favorite vegetable broth. Simmer until those flavors have time to get to know each other, like 2 hours or so, then add a bunch of roughly chopped kale (the heartier the better) with the thick main stem removed. Simmer until kale is wilted, salt and pepper to taste and serve.

    5. They're all pretty great, and variety is the spice of life so try to incorporate a bunch of different ones!
