Cover it with pico de gallo. Now you don't have to look at it and it tastes like pico de gallo
Where I live its common for tacos to have curtido on top which is like a fermented cabbage cole slaw with jalapeños, I recommend!

I hadn't heard of curtido before but it sounds delicious
It is considered Salvadorian but its common throughout Latin America now for being objectively delicious.
That vegan cheese has been carefully engineered to be the worst thing ever when cold and probably pretty decent when melted.
Just make it less messy and warm the tacos, and all'll be fine
