Notice the wording on that. It isn't "1% of cattle eat chicken poo" it's "1% of the total amount of chicken poo is fed to cows." They don't mention the amount of cows actually eating it, and this is a survey, so 1% is almost certainly a very low estimate, as there's no reason to think others would just lie about it.
And if you've ever kept chickens before, you'll know how much they love pooping, so even 1% is still a huge number.
