I feel like there's a conspiracy to make tofu seem bad; a couple days ago we made some to go with our curry and it might have been better than most meats I've ever had, but anytime I was ever given tofu in a meal I bought or something it always seemed like a rubbery tasteless mess

They are. These days I can't avoid doing "how many chickens I'm eating math", but as a semi-vegan-plant-based person, I'll still partake every once in a while
Once I had "buffalo" tofu and tofu with lemon+dill I realized it's entirely possible to substitute any sort of bland white meat with tofu and season it accordingly, and it still tastes good.
