I love to cook and make new fancy dishes. Lately however, I want to be more rigid and structured with my diet to avoid binge eating. Post your favorite casserole/crock pot classics for me to give a shot. Some of our favorites are crockpot chicken and dumplings, cheesy broccoli rice casserole, breakfast casserole. Easy, cheap, tasty. Hit me with them. If it turns out good I'll post it here.
Bonus points if it uses black beans because I have about eighty cans of black beans...
I spice a big ol pot of black beans, my personal go to is s&p, garlic, oregano, chille pepper and red wine vinegar.
Then, I fry a bulk pack of corn tortillas.
Finally, I bake some sweet potatoes.
Then when I'm hungry I grab a serving of each, heat it in the oven on low (sometimes with vegan cheese on top) and chow down.
Back when I was ovo lacto I used to fry an egg to throw on top. Now I have a side of protein powder instead.
I've been looking for a way to incorporate more sweet potato into my diet, I love sweet potato so fucking much. Have you used any other kinds of tortillas?
