I've tried a couple of vegan cheese things, and they haven't been very good. In particular, none of them melt like animal cheese.
I'm of the school of thought that trying to replicate carnist food with your vegan products is pointless, you should make unique vegan dishes that are good on their own instead. However, I really miss delicious goodness that I can melt on top of my food.
Do any comrades have good products or ideas?
Myokos Mozz melts really well, it's really good on pizzas especially.
Vegonzola melts real good. But it's a blue so not ideal for everything. I stick it on pizza
Closest I've come to that is black bean paste. As in the Chinese variety. It's all salt and umami, so it works as a half hearted replacement. But yeah, that's the best I can personally offer.
