My problem with Alex is that he keeps putting out these hot takes like his video about how you shouldn't deep fry at home and he's consistently fucking wrong
idk about that example, but I know what you mean about ragusea. I personally hate frying at home and don't really want to just dump the oil straight into the compost, but also I rarely deep fry and I hate cleaning up the mess it leaves on my stove.
His whole, "volumetric measurements are fine, who cares that powders are compressible" schtick as a way to draw in people who don't have or want to use a kitchen scale is straight up bullshit though. If the humidity is high enough, those errors can really fuck your recipe of e.g., pizza dough
