Persian cuisine uses a good amount of dill. Just putting it on basmati rice gives a lot of flavor, but one of my favorites is maast o khiar (yogurt and cucumber). It's similar to that russian cold soup but this is a side dish you would eat with a kebab and is much lighter. Some recipes add raisins and walnuts but that's just fancy shit to impress white people.
The only things you really need are yogurt, cucumber, salt, pepper, dill, and shallots. Garlic and/or mint are optional if you like those flavors.
Just mix that shit up and leave in the fridge for an hour before eating with rice or bread. Obviously if you want it more persian use Basmati rice or sangak bread.
Baghali Polo and Sheveed Polo are main dishes you can make that feature dill rice, and there are plenty of good recipes online for those as well.
