I really enjoy the sort of resource-gathering / automation games like this, but it's tough to tell which ones have nailed the feedback loop that i really enjoy this genre

Feed The Beast modpacks in Minecraft, Scrap Mechanic, Astroneer, are more survival oriented but turn into automation games after you've gotten past the early game. Avorion if you play it for long enough turns into a management game where you can control huge production lines in a galaxy.

Also try Infinifactory. It is a factory building puzzle game. It doesn't have resource-gathering but you may still enjoy it

Mindustry is awesome, it's getting semi-regular updates too right?

Haven’t touched it for a while but I think it’s received a few updates this year

Kenshi actually has a really good automation and jobs system, you have to have the people to do the job but you can automate it all. I have a city that runs itself, grows weed and makes weapons and armor. Then I’ll spend my time with a group of elites going around the map doing whatever.
