So as I understand it, RSS feeds only point to one place, so if you want to have the same feed without an outside service you need to have a server that your various devices can read from. What do y'all like and am I going about this correctly?

I'm not really sure what you mean. Any device should be able to access an RSS feed without requiring an outside service.
I use FreshRSS. Easy to set up with docker, nice interface, and uses the Fever API so it works with a bunch of mobile apps.
I've been meaning to set up a ttrss for a while but never got around to it, just keep using the minimal reader Flym on my phone.
