On this day in 1916, revolutionary Irish Republicans initiated the Easter Rising, proclaiming an Irish Republic independent of British rule and battling with the British Army for six days, killing nearly 500 people.
The rebellion was a collaboration of multiple militant Irish organizations, including the Irish Volunteers, the Irish Citizen Army (ICA), and Cumann na mBan, and an Irish women's paramilitary force. Notable leaders include schoolmaster and Irish language activist Patrick Pearse and socialist James Connolly, who served as head of the ICA.
Together, this coalition seized strategically important buildings in Dublin. Britain responded militarily, sending thousands of troops and artillery to clash with the Irish revolutionaries.
The resistance lasted six days before surrendering to the better equipped British Army, and artillery shelling and street fighting left many parts of Dublin in ruin. 3,500 people were captured, 1,800 of them sent to internment camps. 485 people were killed, and more than 2,600 were wounded. Pearse and Connolly, along with 14 others, were executed for their role in the rebellion.
The Rising was the first armed conflict of a revolutionary period of unrest that began in the early 20th century. In the "Proclamation of the Irish Republic", the revolutionaries linked their cause to centuries of struggle:
"We declare the right of the people of Ireland to the ownership of Ireland and to the unfettered control of Irish destinies, to be sovereign and indefeasible. The long usurpation of that right by a foreign people and government has not extinguished the right, nor can it ever be extinguished except by the destruction of the Irish people.
In every generation the Irish people have asserted their right to national freedom and sovereignty; six times during the past three hundred years they have asserted it in arms. Standing on that fundamental right and again asserting it in arms in the face of the world, we hereby proclaim the Irish Republic as a Sovereign Independent State, and we pledge our lives and the lives of our comrades in arms to the cause of its freedom, of its welfare, and of its exaltation among the nations."

Today is weigh day. Despite eating lunch at a sushi buffet yesterday, I lost 2 pounds for the week. That's 6 pounds total so far! :hexcrab-party:
Today is also the first day I'm making myself count calories. This week I'm going to see how well I can handle a simple 2k limit. I skipped breakfast and had 2 tofurky sandwiches for lunch. They had 2 slices of tofurky, 1 slice vegan cheese, a chopped up mini sweet tomato, and mayo for a total of 300 calories a piece. Without the mayo it would have been only 200 each! (Even replacing mayo with guacamole would have reduced them to 250 calories a piece, and a mustard replacement would have been only 220.) Mayo is so fucking sneaky like that! No wonder white ass America has weight issues. I had 2 oranges with that (90 calories). Then 2 hours later I got an obnoxious craving for sugar, so I tried something a little wild: I "borrowed" my roomie's light chocolate sauce (20 cal a tbsp, believe it or not) and mixed it with 180 cal worth of peanut butter. Then I put it in the pocket bread and toasted it. S O F U C K I N G G O O D~ I had two of those, and just like the healthier sandwiches they came out to 300 a piece. So before dinner even arrived I was at about 1300 calories. I really wasn't sure what to do with only 700 calories without heating up fish, but then I remembered a dusty old jackfruit can in the back of my pantry. Only 80 calories a can! (In comparison, beans are around 400+ a can, smh) I carefully measured 320 calories worth of rice to mix with it and an hour later ended up with a spicy Mexican jackfruit and rice bowl. 10/10 would use as a burrito base, and it was incredibly filling as well. I have between 200-300 left. I guess if I get snacky tonight I'll eat some Taco Bell flavored sunflower seeds.
Not really sure about the weight loss angle but you can fry up some jackfruit with onion and peppers and whatever sauce you please it makes a good pulled pork substitute.
Oil can be high in calories if not measured carefully, but I do love fried onions and peppers. I'll have to give it a go after I stock up on more jackfruit.
Yeah I figured that's where the issue would be, it takes a decent bit of oil for the texture to be on point.

That would probably be good, I've never done jackfruit in a slow cooker that way. Might be good to let em marinate in some stock or maybe let it soak it some mushroom gravy before adding it to the slow cooker? Otherwise it might just absorb the taste of the rest of the stew and therefore not taste like anything.

idk how you feel about sushi generally but if you want a fun low carb snack/meal, my go to is smoked salmon slices rolled up with cream cheese and pieces of avocado, topped with everything seasoning and dipped in soy sauce. no-rice philly rolls 👍🏾
edit: also congratulations on the weight loss! calories in/calories out is really the only rule you need to worry about but keeping your carbs under 40 g a day will help a lot too
Oh yeah, I love raw salmon! I stock up on it whenever it's on sale.
I'm trying to keep my meat intake to 3 meals a week so that I'm not as dependent on it as I used to be. I haven't tried adding avocado to raw salmon/cream cheese rolls, I'll be sure to try that next month. :meow-bug:
