Just whichever stands out to you as more fun. They both have merits. Bloodborne's for sure faster-paced with weirder weapons, but ds3 has better build options and it's not exactly slow.
Bloodborne teaches you how to play the fun way, dodging and weaving and using big swings for crowd control. DS3 is great but I think Bloodborne is more approachable, it's the game that taught me how to love the souls games even though I really liked og dark souls before playing it.
