    My go to answer is basically "I'm looking for new challenges that will help me continue to grow my skillset and I think that's what your company has to offer!"

    There is a kernel of truth there too; The only challenges I'm looking for at your company are the ones I can find shortcuts through and/or automate away without telling you I've done it so I can collect my check without working. But they don't need to know the finer points of it.

      I had a comp sci professor with a great anecdote to this effect. He once got hired at a job whose role was pretty much producing a daily report. The guy before him used to run around like mad getting all the data together and compiling it for the report, often working late to do so. My professor took one look at the report, wrote up a Unix shell script that would automatically compile it. So his work day was, come in, run the shell script, spend the rest of the day reading sports news, hand in report at the end of the day.
