P. ostreatus pan-fried has like 80% of the texture and taste of bacon. P. eryngii is firmer so you can marinade it and grill it like a non-fatty charshu. Expensive if you buy them at market but if you grow them yourself on sawdust/straw they drop down to like 70 cents per pound.
