The whole point is that you should take the pasta out of the water slightly undercooked and finish it off in the pan/pot with the sauce, with a little pasta water. That way it all bonds together nicely.

Honestly try it, it makes a world of difference. Just don't add too much pasta water as it's easy to oversalt the sauce then.
