Yes it will be harder if they're doing something like an English Longbow rush, or a Knight rush. You have to really crawl with your towers at that point. When you drop the first tower and they've got like 5 spearmen, it's usually smooth sailing. If they're rushing, they'll probably win as long as they have good micro and can remain calm.
Luckily they can't really harass your base too hard. All your guys are on stone, so you can drop one of these towers right there, And you can keep your sheep by the Town Center in case they push your 1-2 villagers who are on the mill.
I suspect there might be a trend of early rushing any Chinese opponent, sort of like how in AOE2 you want to keep a Persian opponent well scouted early on.
Yes it's better as Chinese, because they build walls (and towers I think) faster. You're right that Chinese does have a very strong late game so you should attack them in the early-mid game. This hits a bit earlier though.
