If I remember correctly a lot of the physical mass of poop can be comprised of body waste that doesn't come from food like dead blood cells and bacteria
Just like how most of the mass you lose actually is exhaled, since after all the bulk of the biological magic happening in your body is powered by turning oxygen + other things into CO2 gas and energy.
