I have a friend that's a dedicated omnivore but prefers the Gardein fishless fillets over the real thing. Imo there's plenty of merit in giving people a choice that might have reservations about "muh tastebuds" but are also cognizant of the impact that their diets have on the environment and will opt in if they don't feel like they're sacrificing mouth feels.
