That's possible, but some of the pilot account are really fucking weird. Read about what David Fravor saw, if you take the man's word for it I don't think there's any way for it to be human technology unless you buy into the "the military is always 100 years ahead with technology" propaganda crap.
I mean it's entirely possible that the guy and the other pilot that saw this just so decided to become UFO grifters or whatever but I dunno it sure as shit makes me raise an eyebrow.

This is not a good argument for multiple reasons.
First try filming a plane high in the sky with an average smartphone, it's gonna turn out like shit and you're barely gonna be able to tell its a plane even if you use the phone's camera with the proper settings, which most people won't be. You're greatly overestimating the camera of the average smartphone.
Secondly these things are (reportedly) fast as fuck, like order of magnitude of mach 10, they're gonna be gone by the time you start filming in all likelihood.
Thirdly the real sighting just might be really rare. They might just be interested in military capabilities and have no reason to fly around civilian areas.

Why is that more likely? The kind of manuverability they were talking about literally doesn't even exist in most sci-fi. I mean maybe they were heavily embellishing what they saw, we never really did see the radar data.
I don't think we can for sure discount aliens though.
Prototype supersonic USAF drones with thrust vectoring. If it's a flying wing design (e.g., like the B-2 Spirit stealth bomber), that's going to look a hell of a lot like a flying saucer to a casual observer, too, although it's hard as hell to keep a flying wing craft from spinning out when it breaks the sound barrier. Without a crew cabin, and with somewhat modern automated flight controls, it might be feasible, especially if some dipshit failson at Northrup Grumann/Boeing/Lockheed Martin managed to secure unlimited funding.
