So I tried making paratha today (not that recipe because I didn't have all of the flours) and it was very pleasant. I had one with a vegan pesto that was fantastic and will be eating the rest with lentil curry soon. I had a taste already and I'm very excited for the full meal

Those both look great. I will absolutely be making paratha soon since that looks amazingly easy. And the curry sounds incredibly tasty. I think I'm missing a few ingredients but I will be sure to try that one soon too.
