Alsomost small pocket knives don't have a guard to keep your hand from sliding off the handle onto the blade. Very unfortunate to hurt yourself this way when trying to do something.
If you want to go further than lentils but don't want to risk slashing the tire itself you could also just snip the valve stem itself. It's not massive damage but it requires taking the tire off the rim to replace.
Just be careful if you're slashing the larger tyres, don't want to see any comrades get hurt

Yep. It doesn't actually destroy anything, just immobilises it until they can reinflate the tyre.
