You can get some pretty nice ginger beers that aren't very sweet, though I agree that it would be nice for there to be more non-alcoholic non-pop drink options. Sparkling water and a slice of lemon is my go-to in summer
Ive been mixing one part unsweetened tea with two parts strawberry lemonade with some chopped up strawberries or any berries added. Then I add ice and shake it up real good in a shaker and it comes out deliciously frothy.

Kvass is rad. Ranges in taste from non-alcoholic beer to rye bread to a sweet roll.
I made alcoholic kvass once. I don't know how but it turned out like fucking champagne. Was interesting.
