I've heard nothing but praise for GrapheneOS, which you should be able to install and wipe out all of the pre-installed crust on your phone. Once you do that, it's best to get apps from Fdroid, but Graphene also has a feature where it can run the Google Play store and apps sandboxed if you need something that isn't FOSS.
To be clear I haven't actually tried it yet, it's just been on my radar because I've been thinking the same thing as you for a while, and just haven't pulled the trigger yet.
I have been using a graphene phone for almost 2 years. The main drawback is that I can't get OsmAnd navigator yo work even remotely as well as google or apple maps. Also, a lot of apps require google play services to work, so you don't really know how an app is gonna work until you download it. Some doesn't work at all, some works with some features (like Discord does everything except push notifications), and other stuff works fine.
But otherwise, I love my phone. It feels like mine. No bloat, no adware, no bullshit. It immediately changed my relationship to my phone. But if I would replace it I might not go completely de-googled, and instead choose another os that maybe isn't as necessarily security hardened, as the lack of some google features is genuinely kind of a pain. It would be nice to like turn it off, to not have your whole system be required to use it, but still be able to.
Graphene seems to be focused on Pixels. They don't really have any other phones in their supported devices list.
