Homemade seitan is pretty good, but I'm NGL because I usually do my lazy baked tofu.
Firm tofu. Drain if you like to do that. Marinade in 50/50 soy sauce and rice vinegar with ~1tbsp of sesame oil and chili garlic paste each. Toss on a baking sheet at 425F for 15 minutes. Flip it over, spoon a little bit of the marinade on it, toss it in 10 more minutes. Flip it over once more, spoon marinade again and toss it back in for 5-10 minutes.
I pick up the recipe by cooking the veggies. It's kinda totally changing the recipe, but it works :vivian-shrug:
I veganized their beef and broccoli as a nice weekday dinner that's often in the regular rotation.

Not OP but there's a soy ground beef product that replaces beef amazingly well.
