Yeah China eats a lot of meat, especially pork. I can see vegetarianism being more popular in China than the USA, but not veganism.

The Buddhist influence and relative scarcity of meat until the 70s does mean that if you did want to go vegetarian or vegan in China though that it's really easy, so many dishes were created with the lack of meat in mind. Especially if you're like me and can't stand imitation meat. I would much rather just have tofu or beans or mushrooms in their normal forms. Also, try gluten, it's really good and is imo better than meat substitutes.

I don't know where they're getting these stats from but this website says 5% of the population is vegan and that China accounts for 70% of the plant based meat market in the Asian-Pacific region. https://trulyexperiences.com/blog/veganism-statistics-china/

Woks of Life is pretty good. Their salt and pepper tofu is excellent, Kung Pao tofu is good, and I've been meaning to make their sesame balls.

I veganized their beef and broccoli as a nice weekday dinner that's often in the regular rotation.

Homemade seitan is pretty good, but I'm NGL because I usually do my lazy baked tofu.

Firm tofu. Drain if you like to do that. Marinade in 50/50 soy sauce and rice vinegar with ~1tbsp of sesame oil and chili garlic paste each. Toss on a baking sheet at 425F for 15 minutes. Flip it over, spoon a little bit of the marinade on it, toss it in 10 more minutes. Flip it over once more, spoon marinade again and toss it back in for 5-10 minutes.

I pick up the recipe by cooking the veggies. It's kinda totally changing the recipe, but it works :vivian-shrug:

Not OP but there's a soy ground beef product that replaces beef amazingly well.
