I've learned that I need to be careful with cold brew too, because when it compounds with my adhd meds I can get pretty anxious and feel a wicked tension in my chest... I'm sure you know, oof. Though I'm curious to try it with cheaper coffee to see if I notice a difference in taste

I’m no connoisseur and I’m sure bad coffee is bad coffee but cold brewing reduces the actual or perceived acidity in the flavor.
The long brewing time means the water soluble caffeine has a more complete extraction. I have a bit of an extra caffeine sensitivity though.
