Mainly they just deplete B vitamins which do eventually cause brain damage if you keep hitting them non stop.
And no - it's not just asphyxiation.
My experience with nitrous has been weird, mainly it's a deja vu machine - I end up going through a loop of every single time I have ever done nitrous up to that point and my reaction coming back is "holy shit it all keeps leading up to this point" where my reaction is the same literal knee slapping laughter at the serendipity of it.
