Don't get me wrong I fuckin love tofu but Seiten is better. It has that meat like consistency but you don't have to chew every morsel for 90 seconds before you swallow it.
It depends on what you're going for I guess. Soy-based mock meats can be good if you're imitating something like chicken nuggets I find, but I think that seitan works well for things like hot dogs and steaks.
tofu is best when it's served as tofu, not as a meat replacement. asian countries perfected tofu dishes hundreds of years ago. i have some kind of tofu at least once per day
gluten meat/seitan is great especially to make roasts and ch'cken or t'rkey type things
