So I just buy boxed white wine and mix it with seltzer water. Makes it fizzy like champagne but also waters down the wine so I don't drink as quickly. Also hydrates me a bit so I don't get hangovers.

Don't rich people buy champagne? They have plenty to celebrate. House prices are up, labor now costs next to nothing (and in many cases, is provided free of charge), and people are more miserable than ever. All of those are things the rich want.
