        Traditional aioli consists only of garlic, salt, and olive oil. It can be very garlic-spicy, so people adulterate it with mayonnaise to be more palatable to midwesterners.

        Aioli has garlic, and aioli purists maintain that it shouldn't have egg, while mayo does not have garlic and by definition has egg yolk. Apparently aioli ONLY has garlic and no other flavorings, too.

          Aioli just means garlic oil.
