Funny and believable but maybe a stretch with how they don't have an irish accent and e.g Scotland has tons of gingers too. I do feel like it's some form of stereotyping and (in the spirit of this post, kinda /s) another of her bad ways of representing a minority (overwhelmingly white cishet characters)

The main reason the Weasleys are gingers is so JK Rowling can tell us that the Irish are poor and breed like rabbits.
