I'm convinced that the fixation on avoiding carbs mostly comes from people being too childish to develop the taste for whole grains. They're delicious and nutty once you get used to it, and you can supplement 100% whole grain products for almost anything that has refined grains. Brown rice/quinoa is the obvious supplement for white rice, Dave's/Ezekiel Bread are so much better than anything else, whole grain pastas aren't as good but doable if you're trying to keep a diet. The real benefit is that they're so much more filling and satisfying on top of being more nutritionally dense.

They hold up really well in some recipes, but they just don't do it for me in others.
But like, we don't need to start different tendencies over this, eat your pasta your way fam.
