I've never thought veganism was about KFC. But, under the capitalist context, it is about altering consumption, not organizing labor power.
Will it be important in a future controlled by labor? Absolutely! Is it important to try as an individual to limit animal harm? Yes! Is it worth it to me to push that consumption culture at the expense of current labor organization? Not to me.
Of course veganism must be intersectional, but class reductionism and ignoring it isn't the answer. Have you checked out Aph Ko? Racism, colonialism and speciesism are interlinked and have to be fought together.
