I made some vegan mozz last night with some leftover cashews, and got a whole bunch from costco today. Gonna be trying a bunch of vegan cheese recipes for a little bit.
Its just because i bought some tapioca starch to make pan de yuca to make pepperoni rolls with a while ago. Since i've switched to a mostly vegan diet, i've been fascinated with what i can do. Even convinced my girlfriend to cut down on meats to just twice a month.
Nice! Going vegan made me learn so much more about cooking. Last place I worked before covid was a vegan restaurant where we had a lot of leeway to make stuff up if we had an idea, got some really cool dishes out of it.

Do you have any tips on how to make cashew cheese 'cause I have a bunch of these shitty bagel-flavoured cashews I want to get rid of and making it into cheese would be fantastic but the last time I tried I basically wasted a bunch of cashews on some lumpy cashew paste.
