Most people in Taiwan probably think of themselves as Taiwanese, similar to how people around the world generally identify with the regions/areas they grew up in and/or live in. But it's important to point out that as of last year only ~1/3 of Taiwanese people were in favor of declaring independence from China (source). The other ~2/3 of Taiwanese seem to mostly be grillpilled on the topic of whether Taiwan should be it's own thing or part of China.
