The one I played first at an impressionable young age, of course.

PoR/Radiant Dawn easily, especially when played as one game. They're basically the pinnacle of classic FE gameplay.

Everybody says Geneology of the Holy War or Thracia 776. These games have a great story but can be incredibly frustrating. Maybe start with Fire Emblem Binding Blade/ Blazing Blade to get a feel for the game. Shadows of Valentia is pretty good too to start with.

Oh I understand FE, I've played one of the ones on the DS. There's just so many that I don't know which I should realistically pick.

I meant Genealogy and Thracia have the best story but hardest gameplay, and the maps can drag on for hours. It depends on how much patience you have,

I just started three houses and I’m in love with it. Radiant dawn was also very fun.

I consider Fire Emblem 7 a great Jack-Of-All-Trades game in the series for those starting out. Good plot, good levels (mostly), good characters, and most importantly good accessibility. (I personally prefer Sacred Stones and Path of Radiance myself)

The FE4/5 series is great, especially storywise, but the gameplay is a bit... aged.

Echoes is a good game in its own right, but is a faithful remake to a game that's infamous for being the weird black sheep of the bunch (similar to Zelda 2). It's not a good way to start out if you want a taste of what the series has to offer.
