Seconding indian food. I hadn't really tried it until college when I lived across the street from an Indian place. I think I went there 1-2 times a week for my entire college career.
Chili
Tbf, I tasted it first when I was little :excitement: and it was a really scuffed version with tomato beans so it implanted in my head that Chili = yucky
Pork chops that I cooked myself to 145F instead of whatever surface of the sun temperature my mom used to cook them to.
I had always thought they were just a really awful, cheap cut of meat that had the consistency of extra thick cardboard.
Same thing applies to chicken and turkey breast.

practically raw, on the verge of being undercooked meat is the best meat. But you may get the shits if you're not practiced at cooking it just enough
I honestly can't think of much of anything because I'm about as picky of an eater as a dog who just saw some food fall on the floor, and I'm generally open to eating almost anything. But of all the things I didn't expect to be so tasty... Horchata? Rice, cinnamon, sugar, and water has no business being that tasty

Thai curry, sake, sushi. Mostly a lot of Asian foods I guess. Growing up suburban and white I never expanded my food horizons until I moved out and my partner started introducing me to new cuisines. Now if she wants to take me to a random Moroccan restaurant or whatever I’m always open to it but just ask that she orders for me because I have no idea what I’m looking at on the menu half the time. Oh and Ethiopian food. Had that for the first time like two weeks ago and it fucking slaps
Same. I grew up in a house that was not very adventurous when it came to food and I've spent the last few years trying new things. Curry is so good
An Indian lunch buffet for sure. Our town had no Indian restaurants directly and my parents aren't adventurous. But goddamn, every single thing was great and I had no clue what any of it was. And I'm aware now that British Indian Restaurant food is most often kind of a colonialized version of mostly Punjabi food. But goddamn, that's some great stuff. I am in aww of this, because I can accomplish acceptable Mexican food in the kitchen, but it's so hard to make that BIR flavor at home.
There is this mint chutney that is common at indian restaurants that I make sometimes. It isn't really intended to be eaten this way, but I like it with pita chips.
Probably hummus. I have no idea why it took so long to try it, but it's incredible
