I have, over the years, done keto and OMAD keto. That being said I NEVER went the "all meat" route. Sure in these diets you usually do eat a good amount of meat but there are sources of fat and protein that doesn't have you eating steak and sausage for every meal. Those ppl are crazy and either doing it because stupid chuds see themselves as "big strong alpha hunter cavemen who only eat meat" or just reactionary "lol look at me owning vegans gotta support the meat industry." Like those dudes that "roll coal" to spite people that drive low/no emission vehicles.
Even on keto I eat lots of low carb high fiber vegetables. Salads make up a good portion of my meals then I add protein and fats too that. I also ferment a shit ton of sauerkrauts cause I love that shit.
The big thing for me is the science behind carbs and insulin and how insulin basically shuts down your body from pulling and burning your fat stores. I also have a strong genetic disposition to diabetes t2 and was at one point prediabetic. Keto and OMAD fixed that. I have even gotten in to periodic multi-day fasting as well and have done a few 6+ day fasts. I can definitely say being fat adapted for a few weeks then doing a fast makes the fast soooo much more tolerable. It actually makes the fast so much easier that I'd say I'm all the 2-3 weeks minimum of ketosis beforehand is more difficult to maintain than the actual fast. The fast I have tried without being fully fat adapted beforehand were much more difficult and my hunger was much, much worse initially.
This all being said my goal is to get a healthy weight and lifestyle of exercise and diet then not do so much keto anymore but maintain lower levels of carbs and mainly healthy natural carbs from high fiber sources like beans and whole grains. I have just never successfully been able to loose weight without keto. But I fucking love beans and potatoes. They are my biggest weakness. Even trying to ferment beans now so I can add them to my diet with less of a carb impact. I doubt I'll ever be vegan but I would like to do several vegetarian days of the week.
As for the dietary distress questions I can't answer. I have never had that as I still eat plenty of vegetables and also probiotic fermented foods. All carnivore diets are stupid and even from a lot of the keto community seen as extremists because there's no real reason to do it. Vegetables are good. It's just some not so much.
Also, a side note for fasting. If you ever want to "eat more of something," fast for 5+ days then when you begin refeeding start with those things. I did this with salads and a little bit of fermented foods and it was all I wanted to eat for like 4 months. Even after that time period when I get real hungry I just imagine chomping down of a crunchy salad. It's basically a reset for your gut Flora and whatever you want is what it resets it with.
