    Food fact: Sodium citrate and whey/milk concentrate thickeners can be added to any cheese base to make an American-style shelf-stable cheese like Velveeta . It will last weeks/months on the shelf not years like the commercial kind.

    If you just want a cheese sauce for mac and cheese you can just use sodium citrate.

    You can buy a tub of food-grade sodium citrate for like $25. Which will last for decades. We use it to make assorted fancy cheese macaroni and cheese in my house. Works like magic.
