    human grade

    this is the only thing that I need to hear about stuff that goes into my body. chalk paste? cartilage trimmings? yes! as long as it's human grade, I'll eat it!

        lol, solid ass bit.

        I went to school for like ag and food shit, so I learned the grading system. the real terms are more dystopian, because of course the the optics of anything that doesn't look amazing would be bad for industry.

        so, I invite you all to see the beef quality grades in the US from highest to lowest:

        • choice
        • select
        • (if you're at a grocery store and you're buying beef as an ingredient to take home and prepare food, it is one of the ones above this line... below this point is entering the Dark Territory)

        I love cartilage and offal. Never really understood the brainworms people have that makes some part of an animal less gross to eat than other parts. It's all just taste and texture.
        I only eat meat as a rare treat these days, but when I do I'll often use heart or liver or something.

            Yeah it sucks. I just don't understand why otherwise normal people still have those brainworms. Like I have a lot of leftist friends that will happily eat a steak, but be weird about the other stuff.

          For me it's the texture, gives me the heebie-jeebies (not talking about other parts like offal, just meat-related hard, crunchy, slimy textures etc)

        TIL, the phó places here usually have brisket, beef balls, tendon and tripe (which I guess is offal). haven't really seen cartilage
