    wtf that's weird. to me, bread is just flour water yeast and a bit of salt.

        I guess it was just a bigger thing in the 90s? It looks like that book is from 95.

        it sounds like the bread book you want is Flour Water Salt Yeast

    Direct from the Vegan baking Bible " The Joy of Vegan Baking" by Colleen Patrick-Goudreau:

    "If a recipe calls for cow's milk, try using an equal amount of unsweetened soymilk, almond milk or coconut milk. Pick a nondairy milk that will complement the taste of the dish, like coconut milk in tropical treats or almond milk in nuttier baked goods."

    1/4 cup warm water

    3 tbsp oil (mild)

    2 1/4 tsp yeast

    2 tbsp sugar

    2 tbsp gluten (not needed but makes it way better)

    1 tsp salt,

    Let all that stuff sit till the yeast gets bubbly

    then add 3.5 cup flower

    Stick it on the kneed setting for 2 minuites,

    Cover till it doubles in size.

    Punch it down and put it in a loaf pan, let rise again

    Bake at 390 for 25 minutes

      How about a good rice and beans recipe? I often eat this as a whole meal. Make sure to use roasted tomatoes, get the rice nice and fried before adding the water, and don't skimp on the lemon juice at the end. Add some homemade tortillas and an avocado with some salt and pepper, and you're rolling.

    just put things in a bowl, wait, deflate, wait again, then put it in the oven

    flour water yeast, some salt. the amounts don't matter just wing it, only a small bit of yeast/salt.

    I would think you can substitute sugary water for milk in bread. You need something to kickstart the yeast unless you're using sourdough starter (are yeast vegan?).

    A lot of those recipes can probably sub in equivalent fat oat milk. Worth a try at least, enriched doughs are always nice.

    I know I’ve seen people make Challah with that new vegan egg substitute too with decent results.
