It’s honestly pretty easy, although I have no idea what I would do without cheese though :deng-cowboy:
So many vegetarians suffer needlessly by not learning to cook the amazing variety of vegetarian indian food.
If I had to only eat one culture's food for the rest of my life it would be Indian. There is so much variety, most of which is naturally vegetarian and a fair amount is even vegan.

According to vegans I know /listen to vegan cheese has really improved in the last decade or so
it has but it's still not super cheap. i tend not to buy it except for special occasions
There's so much good food that can be made as long as you don't view food through the paradigm of food with meat or cheese. There are definitely a massive variety of dishes that don't use meats or cheeses.
Same, and for the same period of time. On paper I'm now vegetarian but I just realized that since I never ate eggs, milk or cheese in the first place (can't stand them), I guess I'm actually vegan too.
Also, try making some seitan, it's awesome. So is tofu if you marinate it well (breaded tofu is pretty great, too).
Honestly if it weren’t for eggs and cheese I’d have an easy time going vegan. Vegetarian hasn’t been that hard save for when I walk pass a BBQ place.
