My gf and I have made countless amounts of hummus in the little kitchenaid ones; that little guy is a fucking champ and can even do coffee beans and shit (the coffee grinder has been collectivised and is now for grinding weed). It's small enough to fit literally anywhere, even in a pot or bowl on a counter. The only downside is that its too small to easily do a proper weekly meal prep with it, but a plus side is that it doubles as a bowl for the hummus.

Honestly most of the features that come with "sophisticated" food processors are worthless anyways. For 99% of what you could do with a food processor, all you need are the blades to spin. As long is it fits comfortably on your counter you're good to go.

Uhhh I just use some random immersion I got from Jeff Bezos.

Skinning them is awesome for improving the texture of the final product, and arguably the flavor too. Of course it's really labor intensive, even if you boil them in water with baking soda to get the skins to fall off easier.

Ultimately you can make a batch yourself with the skin on/off and see for yourself if it's worth the effort.

But what I do is spend a little more on chana dal, which are split (and pre-skinned) garbanzo beans used in Indian cuisine. So if you buy that, then you can set yourself up for some authentic indian dishes too :)

My final tip/preference is making sure to enjoy it warm or at least at room temp. I find the flavor is muted if I have it just out of the fridge.
