The flour is the dried, solid bits of lentils, like the protein, while the actual Lentil is probably mostly water.
I suspect the starches are washed out and then the moisture is evaporated or something.

Thanks. I want to round out my (vegan) diet and make sure I’m not missing anything crucial (micronutrients etc). I’m taking a B12 supplement so that’s covered. Any food that is high in satiety but not that calorie dense?
