Got an idea from a website to substitute meat for apple slices when making sandwiches and it works like a dream. The sweetness actually goes very well with everything else.
No potential Crohn’s flare-ups, no afterlunch bloatedness and lethargy, no problems. Easy to make in a rush, too, though having time to heat it up via stove or panini press makes it all the better. Should also work with vegan cheese just fine, which I’ll try.
I'm growing detached from all kinds of meat except fish so that will be my next experiment. Surprised that I didn't think of that.
Oooh another great addition is radish sprouts, if you like a little bit of heat and crunch. I can't get enough of radish sprouts. Edit: I didn't think of it either, there was this deli that used to put sliced tart apples on their tuna salad sandwiches and they inspired me to do it at home.
