Some people are allergic to it. Many more people has convinced themselves they are allergic to it because it has become a fashionable allergy which has then transformed into a more generalised "gluten bad, gluten-free healthy" sentiment.
I love gluten but it doesn’t sit well with some people and can causes allergies 🤷♂️
I used to make buckwheat pancakes a ton, those shits were delicious
Whole buckwheat is great, too, you can use it in ways similar to millet or bulgur.
I've tried making soba noodles from scratch with buckwheat flour, it's much harder than ramen or Italian pasta though. I'll probably give it a try again soon.
