When shooting, your heartbeat throws off your aim. Putting your hand in your pocket like both relaxes you and adds more stability. Other variations include putting your off hand in your back pocket, or hooking it around your belt, but the hand-in-pocket is the most common one.
think it's because you aren't allowed to two hand it, so you have to find something to do with your other hand
It doesn't seem to be unique to this athlete (saw a picture of her Chinese counterpart doing the same) so I think it might be standard for this event?
